Think classic snickerdoodle with a mellow chile kick. We first created these cookies for a special Korean-inspired menu at our Oakland shop, and they were such a hit that we decided to keep them as a permanent offering. We take gochujang—a spicy Korean red chile paste—and blend it with brown sugar for a cookie that's chewy on the inside, crisp around the edges, and the perfect marriage of sweet and heat.
