Stone Fruit and Tomato Salad

This salad is a celebration of stone fruit at their peak. Nectarines, peaches, and plums are all fair game here—use whatever looks best! The balance of sweet, tart, and savory can be adjusted to taste: a little more vinegar if you like things bright and punchy, or an extra pinch of sugar if your fruit needs a lift. Stracciatella brings a creamy richness that ties everything together, but burrata or fresh ricotta would also work. Think of this less as a strict recipe and more as a template for making the most of in-season produce and whatever you have on hand—just make sure to serve with fresh crusty bread for scooping.

Ingredients

1.5-2 pounds ripe but firm stone fruit (such as nectarines, peaches, plums) and cherry tomatoes

1 tablespoon red wine vinegar, such as Espelt Garnatxa Vinegar

2 teaspoons granulated sugar, plus more as needed

Flaky sea salt, to taste

6 ounces stracciatella, at room temperature

About 20 basil or mint leaves, or a combination, torn if large

2 tablespoons extra virgin olive oil, plus more as needed

Freshly ground black pepper


Instructions

Pit the stone fruit and cut into irregular pieces. Transfer to a bowl, then sprinkle with the vinegar and sugar. Toss with your hands, then let sit until juices pool, about 5 to 10 minutes. Taste and adjust sugar and acidity until the fruit tastes perky and bright. Spread a layer of stracciatella on the bottom of your serving dish, and sprinkle with salt. Then add the fruit and their juices on top of the cheese. Tuck in the herb leaves and generously drizzle with olive oil. Sprinkle with a few grinds of black pepper and a pinch of flaky salt.
